Why convert a HEIC photo to JPG?
HEIC is what iPhones save photos as by default, and it compresses better than JPG at the same quality — but that efficiency comes at the cost of compatibility. Plenty of non-Apple apps, older software, and upload forms still can't open a HEIC file directly.
Converting to JPG trades a bit of that space savings for a format that opens everywhere, which is the usual reason to do it: sharing a photo with someone on Windows or Android, or uploading it somewhere that rejects HEIC outright.
